Pumpkin Pancakes

Serves: 4

These pancakes are the ultimate Fall comfort food. The pumpkin makes the pancakes SO fluffy and moist. The pumpkin, cinnamon, and strawberry flavors marry to make an unbelievable (healthier) brunch.

Ingredients:

A pancake mix (and what it calls for)

Pure pumpkin puree

1 cup strawberries

1/4 cup honey

3 tbsp vegan butter/coconut oil

3 tbsp cinnamon

Directions:

Step 1: Heat a skillet over medium heat, melting the vegan butter/coconut oil.

Step 2: Make your pancake mix as usual. HOWEVER, rather than adding the full allotment of liquid (milk or water), mix 1/2 the liquid, 1/2 pumpkin puree. Once the batter is ready, stir in 2 tbsp cinnamon.

Step 4: Chop strawberries and put them in a small saucepan with all of the honey. Cook over medium heat, stirring occasionally.

Step 5: Pour the batter over the heated skillet in

1/4 cup portions. Flip when the pancake becomes bubbly.

Step 6: Serve the pancakes with the strawberry "syrup" and the final tbsp of cinnamon.
