Orange dream cake

Difficulty: Medium

Serves: 8-10

Time: 1.5 Hours

 

Ingredients:

2 boxes white cake mix (plus required ingredients per boxed instructions)

1 can of cream cheese frosting

4 lbs of navel oranges (or about 1 cup of orange juice and two fresh naval oranges)

1/4 cup powdered sugar

 

Directions:

Step 1: Prepare white cakes per box instructions, replacing 1/3 of the water with orange juice (either freshly squeezed or bottled).

Step 2: Thinly slice an orange and remove the peel. Place the orange slices in the bottom of two greased, 9-inch, round, cake dishes. Divide the cake batter evenly between the two pans, on top of the orange slices, and bake per boxed instructions. Tip - to help cakes bake flat, use cake strips (I use Regency Wraps).

Step 3: While the cakes are cooking/cooling, prepare frosting and glaze. Mix 1/4 cup of orange juice with the cream cheese frosting. Mix 1/4 cup of orange juice with the powdered sugar.

Step 4: After the cakes have fully cooled, assemble. Layer the bottom cake (oranges up), topped with 2/3 of the frosting, and topped with the second cake (oranges up). Drizzle the remaining frosting around the edges of the top cake. Pour the glaze over the top of the cake.
