Chocolate Truffles

Wow. These seriously taste sinfully rich and chocolatey. However, to your tastebuds disbelief, they are packed with protein, fiber, and antioxidants. The best part is that my sweet tooth is completely satisfied after eating one of these bad boys. I keep a bag of these in the freezer, and pop one out whenever I need a quick, filling, and delightful treat!

Ingredients:

1/2 cup mixed nuts

1/2 cup almond butter (or any nut butter)

12 pitted medjool dates

1/4 cup raw cacao powder

1/4 cup dark chocolate chips

1/4 cup toasted coconut flakes

1 tbsp coconut oil

Directions:

Step 1: Put the mixed nuts in a blender/food processor. Pulse the nuts until they are coarsely chopped. Put the chopped nuts in a large bowl.

Step 2: Chop the dates (make sure to remove the pits if this hasn't already been done). Place the chopped dates in the blender/food processor. Pulse a few times, scraping the sides in between pulses.

Step 3: Add the dates to the bowl with the nuts. Add the almond butter and cacao powder. Thoroughly mix these ingredients together.

Step 4: Place the bowl in the freezer for 5 minutes. In the meantime, lay foil over a small baking sheet.

Step 5: Take the bowl out of the freezer and with your (clean) hands, shape the mixture into one inch balls. Place the balls on the baking sheet. Place the baking sheet back in the freezer for 5-10 minutes.

Step 6: In a small, microwaveable bowl, add the chocolate chips and coconut oil. Microwave in 30 minute blasts, stirring in-between, until the mixture is melted. Let this cool at room temperature until the balls are ready to come out of the freezer.

Step 7: Pull the baking sheet out of the freezer. Gently pour the melted chocolate over the balls, and top with the toasted coconut flakes.

Step 8: Pop the baking sheet back into the freezer until the chocolate has hardened.

Step 9: Enjoy!
