Double Chocolate Brownies

Ingredients:
5 Tbsp coconut oil
1/4 cup cacao powder
3/4 cup coconut sugar
2 eggs
1 tsp vanilla extract
2/3 cup almond flour
1/2 tsp baking soda
1/4 tsp salt
2/3 cup dark chocolate chips (click for dairy free chocolate chips)
Directions:
Step 1: Preheat oven to 350 degrees. Either grease an 8x8 dish with coconut oil, or line with parchment paper, or both (I do both, and it doesn't stick at all!).
Step 2: Melt the coconut oil in a small sauce pan over medium-low heat. Once melted, add the cacao powder. Stir until combined. Turn the heat off, to allow the mixture to cool slightly.
Step 3: In a small bowl, vigorously whisk the coconut sugar, eggs, and vanilla for about 1 minute.
Step 4: Begin continuously whisking the contents of the sauce pan while you, SLOWLY pour the sugar and egg mixture into the (slightly cooled) sauce pan. The mixture will thicken to a smooth, puddling-like consistency.
Step 5: In a medium bowl, mix the almond flour, baking soda, and salt.
Step 6: Fold the contents of the sauce pan into the dry ingredients until combined. Do not over mix!
Step 7: Mix in the dark chocolate chips. Don't over mix!
Step 8: Pour the batter into your baking dish. Bake for 20 minutes, or until the outside edges are solidified, and the inside remains slightly gooey!
Step 9: Let cool completely, slice, and enjoy!
