Iced Matcha Horchata

Serves: 1

This is a lighter, vegan version of the decadent matcha horchata. Matcha has about half the amount of caffeine as coffee, and has a crazy amount of antioxidants. Overall, this is a healthy, delicious way to start your day.

Ingredients:

1/4 cup water

1 tsp matcha powder

2 tsp honey (more or less to taste)

1/2 cup ice

1 cup soy milk (you can sub any type of milk)

1/8 tsp ground cinnamon

Directions:

Step 1: In a small saucepan, heat the water until small bubbles form. Remove from heat, and add the matcha powder and honey. Stir until all ingredients are dissolved in the water. Let this come to room temperature. (I often make multiple servings of this and store in the fridge for future use).

Step 2: Add ice, soy milk, and ground cinnamon to a glass, and pour in the cooled matcha mixture. Enjoy!
