Crispy Chicken Tenders with Honey Mustard Dipping Sauce

Serves: 1

Ingredients:

1/4 LB chicken breast

1 egg

1 cup panko bread crumbs (can sub gluten free panko)

Pinch salt

3 tbsp yellow mustard

2 tbsp honey

1 tbsp parsley falkes

Directions:

Step 1: Preheat your oven to 400 degrees.

Step 2: Slice the chicken breast into tender shaped strips.

Step 3: Crack your egg into a small bowl, and whisk until the yolk is blended with the whites.

Step 4: Pour your bread crumbs into another small bowl, and stir in a pinch of salt.

Step 5: Dip each piece of chicken into the egg, coating on all sides, followed by a dip in the panko, coating on all sides.

Step 6: Transfer the chicken to a baking sheet (lined with tin foil for easy cleanup). Cook for 12 minutes, then flip and cook for another 10 minutes. *Times may vary depending on the thickness of your chicken.

Step 7: In a small bowl, mix the mustard and honey.

Step 8: Serve your chicken and honey mustard with a sprinkle of parsley overtop and enjoy!
