Roasted Garlic Hummus

Serves: 8
Ingredients:
15 oz can of chickpeas
1/4 cup fresh lemon juice
1/4 cup tahini
3 garlic cloves
4 tbsp olive oil
pinch salt
optional: basil for serving
Directions:
Step1: Preheat oven to 450 degrees. Peel the garlic cloves, and pile them in the middle of a sheet of tin foil. Drizzle this with 2 tbsp olive oil. Folding the edges of the tin foil towards each other, create a sealed "container" out of the tin foil. Cook in the oven for 10-15 minutes.
Step 2: Drain and rinse the chickpeas. Remove the garlic from the oven, and let it cool slightly.
Step 3: In a blender or food processor, add the chickpeas, lemon juice, tahini, roasted garlic, remaining 2 tbsp olive oil, and salt.
Step 4: Blend/process at a medium speed to combine the ingredients. Every minute or so, stop the blender/processor and scrape the sides. If the mixture becomes too thick, add 2 tbsp water. Continue this process until the hummus becomes smooth and creamy.
Step 5: Serve warm, or chill in the fridge. Enjoy!
