Difficulty: Easy
Time: 1 Hour
Serves: 6
This cobbler is packed full of protein and healthy fats. I like to make it to share with friends and family, or even eat it for breakfast. My personal favorite way to eat this cobbler is with a scoop of my vanilla soft serve on top!
Ingredients:
For the topping:
1/2 cup rolled oats
1/2 cup walnuts
1/4 cup unsweetened shredded coconut
1/4 cup pecans
1/4 cup maple syrup
1 egg
For the filling:
2 cups defrosted or fresh strawberries (halved)
Directions:
Step 1: Preheat your oven to 400 degrees.
Step 2: Add the strawberries to the bottom of a 9 inch pie plate.
Step 3: In a large bowl, stir together the rolled oats, walnuts, coconut, pecans, maple syrup, and egg.
Step 4: Evenly distribute the topping on top of the fruit.
Step 5: Put the cobbler in the preheated oven, and bake for 50 minutes (or until the topping is crisp).
